Hey my loves, this weeks vlog is a real life update.
I've been feeling a bit emotional, a bit up and down. Am I in the early stages of labour? What's going on! I was so happy and full of beans at the start of the week, and then my mood kind of went downhill from there lol... maybe i'm just a bit overwhelmed? I don't know.
We also do some vegan cooking, pregnancy updates and plenty of dog spam!
HERE'S MY PEANUT SATAY RECIPE (still perfecting it, but this should work! Just tweak it to your taste!)
Peanut Sauce
¥ 1 cup crunchy peanut butter
¥ 1 can coconut milk
¥ 4 tablespoons soy sauce or tamari
¥ 4 tablespoons maple syrup
¥ 4 teaspoons fresh grated ginger
¥ 7 garlic cloves, minced
¥ Juice of one lime
¥ Juice of half a lemon
¥ Dash of rice vinegar
¥ Sprinkle of chilli flakes
FOR THE TOFU:
- Slice tofu into 1cm strips
- Use towel to soak up excess moisture
- Rip into bite size pieces
- Pour a little soy sauce over the top
- Pour a little oil over (for the flour to stick to)
- Add a few spoonfuls of flour and toss the tofu to coat
- Put into baking tray and bake until chewy!
